The Options menu holds your personal on/off switches. Click an option to flip it; each icon shows whether it is enabled. Settings are saved on your account, so they stay the same when you move between servers of the same gamemode.
Opening the menu#

The menu only lists the options of features that exist on the gamemode you are on, so the list differs per gamemode.
